The trick is cutting everything so it roasts in the same time and giving denser vegetables a head start. Toss in a little mustard or herbs and you have a genuinely satisfying meal.

  • 8 sausages
  • 500 g baby potatoes, halved
  • 2 carrots, chunked
  • 2 bell peppers, chopped
  • 1 red onion, wedged
  • 3 tbsp olive oil
  • 1 tbsp wholegrain mustard
  • 1 tsp dried herbs
  • 1 tsp salt + pepper

Method

  1. Heat oven to 200°C / 400°F. Toss the potatoes and carrots with 2 tbsp oil, salt and pepper on a large tray.
  2. Roast 15 minutes to give them a head start.
  3. Add the sausages, peppers and onion with the remaining oil, mustard and herbs. Toss.
  4. Roast 20–25 minutes more, turning once, until the sausages are cooked and the vegetables golden.
  5. Rest 5 minutes and serve straight from the tray.
