  • 4 salmon fillets
  • 400 g asparagus or courgette
  • 200 g cherry tomatoes
  • 3 tbsp olive oil
  • 4 garlic cloves, minced
  • 1 lemon (zest, juice + slices)
  • 1 tsp salt
  • ½ tsp black pepper
  • 2 tbsp fresh dill or parsley

  1. Heat oven to 200°C / 400°F. Toss the vegetables with 2 tbsp oil, half the garlic, salt and pepper on a tray.
