Miso Caramel Blondies

Ingredients
- ¾ cup (170 g) unsalted butter
- 1¼ cups (265 g) packed brown sugar
- 2 tbsp white miso paste
- 2 large eggs
- 2 tsp vanilla extract
- 1¾ cups (210 g) all-purpose flour
- ½ tsp baking powder
- ¾ cup (130 g) white or milk chocolate chunks (optional)
- ⅓ cup (100 g) caramel sauce + 1 tsp miso, for swirling
Method
- Brown the butter in a light pan until nutty and amber. Pour into a bowl and cool 10 minutes.
- Whisk the brown sugar and miso into the brown butter until smooth.
- Whisk in the eggs and vanilla until glossy.
- Fold in the flour and baking powder just until combined, then the chocolate chunks if using.
- Spread into a lined 20cm (8-inch) square tin. Warm the caramel with 1 tsp miso and swirl over the top.
- Bake at 175°C / 350°F for 23–27 minutes, until the edges are set but the centre is just underbaked.
- Cool completely (chill for clean squares) before slicing.

Step 1 — Brown the butter, add miso
Brown the butter for that butterscotch base, cool it, then whisk in the sugar and miso until smooth. The miso dissolves right in.
