Cheddar Cornbread Muffins

Golden cheddar cornbread muffins in a basket
Moist, cheesy cornbread muffins with golden tops.

These cheddar cornbread muffins are the side I reach for whenever there is a pot of chilli or soup on the stove. They are moist and tender with a slightly sweet, savoury crumb, pockets of melty cheddar, and golden tops. They come together in one bowl in minutes, and a warm one straight from the tin with a little butter is hard to beat.

Buttermilk keeps them tender, and a mix of butter and a little oil means they stay moist rather than crumbly. Sharp cheddar gives the best flavour.

Why this recipe works

Buttermilk tenderises the crumb and adds a gentle tang, while a mix of butter and oil keeps the muffins moist rather than dry and crumbly. Sharp cheddar melts into savoury pockets, and not over-mixing the batter keeps them light. A hot oven gives golden, domed tops.

What you'll need

One-bowl simple, mostly pantry staples:

  • Cornmeal: medium or fine; gives the signature texture and flavour.
  • Buttermilk: for a tender crumb; a milk-and-lemon substitute works.
  • Cheddar: sharp cheddar for the best flavour; grate it yourself.

Do not over-mix; a lumpy batter bakes tender.

Smart swaps: add jalapeno, sweetcorn kernels or crispy bacon. Use milk with 1 tbsp lemon juice if you have no buttermilk. For sweeter cornbread, add a little more sugar. Bake as a loaf or skillet instead.

Step by step

Step 1 — Mix wet and dry separately

Whisk the dry ingredients in one bowl and the wet in another. Combining them separately first means fewer strokes when they come together, for tender muffins.

Step 1 — Mix wet and dry separately

Step 2 — Combine gently and add cheese

Stir the wet into the dry just until combined — a lumpy batter is fine. Fold in most of the cheddar, saving some for the tops.

Step 3 — Top and bake

Divide into the tin, scatter the reserved cheddar over the tops, and bake until golden. A warm one with butter is the goal.

Step 3 — Top and bake

Pro tips

  • Do not over-mix. A lumpy batter bakes into tender muffins; over-mixing makes them tough.
  • Use sharp cheddar. It gives the most flavour; grate it yourself for the best melt.
  • Do not skip the buttermilk. It tenderises the crumb and adds tang.
  • Top with extra cheese. For golden, cheesy tops.
  • Serve warm. They are best fresh from the oven with a little butter.

Storage & make-ahead

These keep in an airtight container at room temperature for up to 3 days; warm briefly to refresh. They freeze well for up to 3 months — cool fully, then bag, and reheat from frozen. They are the perfect make-ahead side for a batch of chilli or soup.

Variations & substitutions

  • Jalapeno cheddar: fold in diced jalapeno for a spicy kick.
  • Bacon: add crispy bacon bits.
  • Sweetcorn: fold in a handful of corn kernels.
  • Loaf or skillet: bake as a loaf or in a skillet instead.

Frequently asked questions

Why are my cornbread muffins dry?

Usually over-baking or over-mixing. Pull them as soon as a skewer comes out clean, and mix the batter just until combined.

No buttermilk — what can I use?

Stir 1 tbsp lemon juice or vinegar into 1 cup milk, rest 5 minutes, and use it as buttermilk.

Can I make them less sweet or sweeter?

Yes — adjust the sugar to taste. Two tablespoons is lightly sweet and savoury; add more for a sweeter cornbread.

Can I freeze them?

Yes — they freeze well for up to 3 months and reheat straight from frozen.
